While we wait to hear from our insurance so we can get into the kitchen, I've been keeping very busy and trying out new recipes!
A lot of my cheesecakes are cashew based, which lend a really creamy but very familiar cheesecake texture. Many have no idea it isn't actually dairy!
But I wanted to try a new ingredient, coconut butter! It isn't like oil, it's creamy and rich and has a little coconut grit.
This is a Coconut & Cinnamon Cream Cheesecake. It's got a lighter almost mousse quality, but still just as rich and decadent as the cashew version.
And of course I'm still testing and retesting recipes to make sure they will be ready for sale once I get into the commercial kitchen! Keep checking back for updates on locations we will be selling products.
